Mama’s Morning Mocha…Mmm

I’m not a big fan of bulletproof coffee. The idea of that much cream and butter in a cup a Joe is less than appealing. It might be because I’ve been drinking skim milk (0% fat) since I was a teen… you know that “low-fat high carb” way of thinking. Even just adding whipping cream (35% fat) to my regular coffee was too much. I tend to forget about my coffee after the first few sips and end up drinking it lukewarm or cold most days. At that point the cream has formed that unappetizing skin on the top; it’s just too much for me.

“Mocha… hot, sweet, rich, & velvety.”

I needed something to start my day off with though. One thing that I’ve always loved is creamy, rich, and velvety hot chocolate; and as the weather gets colder the more I crave it. Don’t get me wrong, I love coffee too, so I’ve been working on my version of a mocha; hot, sweet, rich, and velvety. I’d like to introduce you to my muse: Mama’s Morning Mocha.

Here are two versions of the recipe: a single serve recipe and a batch recipe.

Mama’s Morning Mocha

Ingredients
  

Single Recipe

  • 1/2 Cup Heavy Cream
  • 1 Teaspoon Butter Coconut Oil
  • 1 Teaspoon Vanilla Instant Coffee
  • 1/2 Teaspoon Instant Coffee
  • 1 Tablespoon Monkfruit Sweetener I use Monkfruit with Erythrotol
  • 1/2 Tablespoon Cocoa Powder unsweetened
  • 1/8 Teaspoon Mineral Salt
  • 1/2 Tablespoon Collagen Powder hydrolyzed
  • 6- 8 Ounces Boiling Water

Batch Recipe

  • 1/2 cup Vanilla Instant Coffee
  • 1/4 cup Instant Coffee
  • 1 1/2 cup Monkfruit Sweetener I use Monkfruit with Erythrotol
  • 1/2 cup Cocoa Powder unsweetened
  • 1 tablespoon Mineral Salt
  • 1/4 cup Collagen Powder hydrolyzed
  • 1/4 cup cream 35%
  • 1 teaspoon butter or coconut oil
  • 6 – 8 oz boiling water

Instructions
 

Single Recipe

  • In a mug add the cream, butter and all the dry ingredients.
  • Whisk everything together well, I use a small electric whisk for foaming milk.
  • Add 6-8 oz of boiling water. Mix well.

Batch Recipe

  • Add 3 tablespoons of powder to 1/4 cup of heavy cream & 1 teaspoon of butter
  • Whisk everything together well.
  • Add 6-8 oz of boiling water. Mix well.

Notes

Mineral Salt
The only mineral salt or sodium substitute that I have been able to find in Canada is called Salt Free and is made by Windsor. It is made up of potassium chloride, calcium silicate, magnesium carbonate, sugar, and potassium iodide. The potassium content  is 530 milligrams per 1/6 tsp. or 1 g serving. That  is approximately the same as the amount of potassium in one medium banana.
I haven’t been able to find out how many milligrams of  calcium or magnesium this mineral salt contains, so I’m thinking it’s quite minimal.  Calcium silicate helps with bone, hair, and tooth growth. Magnesium carbonate is helpful in treating muscle cramping  and twitching.
If you are on a sodium-restricted or potassium-restricted diet, please check with your doctor before using any kind of mineral salt.
Collagen
There is a lot of information on the internet that is both for and against the use of collagen powder and tablets.  One thing that most can agree on is that collagen is a good source of protein.
Some of the most popular claims are that it MAY help with joint health, aging skin,  muscle building and fat loss, and digestive health. It is up to you to decide if it is right for you and if it is something you want to spend your money on.
